No-Panic Food Prep

These are strange and uncertain times and I’m sure you also feel that it can be a bit daunting and scary waking up to the news cycle. While I’m trying to be pragmatic, as a Mom, I have to be proactive and so I have taken extra steps to fill up our pantry and freezer so that we’re prepared. I thought I would share some quick and easy recipes and hearty snacks that may be helpful to you. I divided my shopping list into canned, dry, boxed, and frozen along with snacks that you can store.

Here is what I am currently stocking:

Canned:

  • Tomato Sauce & Tomatoes
  • Coconut Milk
  • Veggies like artichokes, heart of palms, olives (great salad essentials)
  • Beans (lots and lots of beans)
  • Tuna
  • Salmon (Coscto has great wild canned salmon)
  • Condiments
  • Coooking oils (Avocado & Coconut)
  • Olives
  • Salsa (anything that would be a great addition to salads or chips:))

Dry:

  • Pasta (long, short, all of the above), Rice, and Quinoa (never enough!)
  • Flour, Oats, Sugars, Baking Powder, Yeast (love having all baking ingredients on hand)
  • Paleonola (paleo granola) great with coconut yogurt
  • Crackers, Chips, Bars (Late July Korean BBQ chips (guilty pleasure and taste like Doritos)
  • Nuts, Trail Mix, Nut Butters
  • Dark chocolate (I love Hu’s Choc)
  • Smart Sweets Peach Rings (another guilty pleasure)
  • Alkamind Chocolate Protein & Green Powder (for protein shakes)

Boxed:

  • Veggie Broth
  • Chicken Broth – I go for low sodium
  • Pancake Mixes
  • Cake Mixes
  • Cookie Mixes

Frozen:

  • Vegetables like peas for my pea pasta recipe, broccoli, brussels sprouts, cauliflower rice (frozen food is just as—and in some cases more—nutritious than fresh varieties) I mainly use veges for stews or steam as a side
  • Garlic (love frozen herbs too like basil)
  • Berries and Mango (great for smoothies)
  • Waffles (for kiddos)
  • Frozen pasta and ready made dishes and meats
  • Pizza (I like Capello’s and Amy’s brands)
  • Gluten Free Chicken Tenders (Bell & Evans ones are amazing in air fryer and so fresh)
  • Veggie Rings (Cauliflower rings but taste just like onion rings)
  • Ancient Grain Millet Tots

Also, here are some of my favorite quick and easy recipes that I’ve made and will continue to make!

Pea & Mint Pasta (sans cheese and I make it dairy free)

Reduced Guilt Ramen (I ditch the ramen seasoning packet but use the ramen noodles with coconut aminos)

Tuna and Salmon Tartine (I love this canned salmon from costco so great on top of toast with mustard)

Artichoke salad (I just use whatever veggies I have on hand to add, even great alone with olives and salad dressing (all canned:))

Vegan Choc Cupcakes

-Green smoothie (1 cup of coconut milk, 1/2 banana, 1 scoop almond butter, 1 cup of frozen spinach, 1 scoop of greens, and 1 scoop of chia seeds, 1 date)

And don’t forget the wine and champagne obviously ;)
